The husband and wife team of Niels and Bimmer Udsen established Castoro Cellars with the goal of producing world-class wines from Paso Robles-appellation grapes. Each vintage presents a new challenge and Niels is more than willing to constantly and creatively experiment. This on-going research is only one of the things that ensures they meet their goal.

Thirty years after first planting its vineyards, Girard continues to produce wines reflecting the quality that has made Napa Valley the most famous New World wine-growing region in the world. Napa Valley's rise to fame was punctuated by a renaissance that began at the same time Girard was setting down its own roots.  The valley's benchmark year occurred in 1976, when a panel of French judges blind-tasted their own wines against a few upstarts from Napa. Much to everyone's surprise, the California wines won first place in both the white and red wine categories. Despite French howls of protest, the now famous Paris Tasting firmly established California on an equal footing with its Old World counterparts.

 

Doce Robles means “twelve oaks” in Spanish and is a small family owned and operated business. The winery has twelve majestic oak trees on the estate which consists of 40 acres. Jim’s viticulture practices consists of organic and food grade quality fertilizer. This practice greatly reduces the need for insecticides and promotes plant health producing excellent fruit. Jim’s philosophy is that “the real work is done in the vineyard”. The winemaking is done in small open top fermenters and is barrel aged for 2-3 years in French, American, or Neutral Oak. The wines are mostly gravity fed and only pumped twice from the field to the bottle which preserves ripe fruit characteristics and prevents bruised fruit.
